I first tasted this soup in the Delta Sky Club. It was so creamy and delicious that I looked on the internet to find out where I could purchase it or find the recipe to make it myself. I found a canned version and ordered it - big mistake. It was definitely not the same soup I had fallen in love with! I was able to find the recipe online, on the Campbell's website that makes soups for businesses. I made it twice, but it was such a laborious process (and wasn't exactly what I remembered) that I finally decided to order the entire 16 pounds of soup from Amazon. I'm so glad I did - it is exactly what I get when I go to the Sky Club (but they only have it about 10% of the times I have been there). It arrives in four 4-pound pouches (8 cups per pouch) that are frozen solid. They are packed in a box which has a styrofoam box inside with another box containing the pouches, along with dry ice. The pouches are really cold (I had to use an oven mit to transfer them to my freezer!) I left one in my sink for a few hours, and then transferred it to my refrigerator to thaw. The next day, it was still a bit frozen, but when it thawed, I placed some in a bowl and microwaved it. It tasted great - you don't have to re-constitute it or add anything. Due to the rice, though, when microwaving, it will pop, so you need to cover it so it doesn't splatter all over your microwave! The best way to heat it is on your stovetop. This soup is delicious; I will definitely be ordering more (when I use up the other 12 pounds in my freezer!) If you're ordering it for yourself, you may want to find a friend to share the cost and the soup! This is one of my favorite soups - it has some spice, but not too much, and the creamy taste from the coconut milk with the red curry is awesome. The chunks of chicken are juicy, and the mushrooms add such a great flavor. Enjoy!
